This is a savoury rice cake snack recipe with good fats and fibre! You can also turn it into a meal by having 2 or 3 of them instead of just one! Easy and simple to make but so tasty. This recipe is vegetarian-friendly. To make it vegan, replace the cottage cheese with a vegan cream cheese of your choosing with any flavour. Ingredients: One rice cake from the 100g rice cake package 1 ½ tablespoons (15g) cottage cheese ¼ of a mini cucumber (you can add as little or much as you want) 4 cherry tomatoes with different colours from the exotic medley of tomato packet Salt to taste Ground black pepper to taste
