I have seen (and tried) lots of those copycat recipes of Simply Asia. I loved them but they were always missing something. Ever since I’ve adapted this one, it’s become the BEST Asian noodle recipe ever!! I cannot stop making it, it’s so good! Make a double batch and share with your neighbours. Ingredients: 1 tbsp (15ml) neutral oil 2 pkts (146g) 2 minute noodles 4-5 (500g) chicken filets thinly sliced/cubed 1 (125g) onion sliced into chunks ½ (60g) green, ½ (60g) red and ½ (60g) yellow peppers sliced 30g sliced spring onion ½ cup (70g) plain roasted cashews 1-2 tsp (3-6g) roasted chilli paste 2 tbsp (18g) garlic chilli paste ½ tsp (3-6g) finely chopped red chilli (more to taste) 3-4 tbsp (45-60ml) Pad Thai sauce 2 tbsp (30ml) light soy sauce Variations: You can do prawn & calamari instead of chicken, also duck, also beef, heck you can just do veggies too, broccoli, cauliflower, carrots, cabbage etc.
