Collection: Sticky Jam Chops
Listen, this recipe is so easy and forgiving it’s basically flop proof. The original recipe is from the Radio Islam cookbook (I think) and it requires you to finish baking in the oven which is great but you could just cook it all klaar on the stove too! I guess that makes it loadshedding proof! Hold on to your panties, this is one of a few recipes of mine that takes a bunch of sauces! Sorry in advance (not really sorry coz dang it’s delicious)
Ingredients:
1 kg thick cut lamb rib chops (fat-trimmed) 1 (125g) onion, sliced in rings 1 pack (360g) robot peppers, sliced in rings Marinade: 2 tbsp (28g) ghee ½ cup (158g) apricot jam, softened 3 tbsp (63g) honey ¼ cup (62.5ml) vinegar 1 tbsp (6g) ginger garlic masala 2-3 tbsp (45ml) mustard sauce ¼ cup (62.5ml) Worcestershire sauce ½ cup (125ml) tomato sauce ½ tsp (3.5g) salt ½ tsp (1g) black pepper 2 tsp dhana jeero (1 tsp (2g) cumin and 1 tsp (2g) coriander) ¼ tsp (1g) turmeric 2 tsp (4g) chilli powder ½ - 1 tsp (1-2g) chilli flakes 1 clove garlic / 1 tsp (3g) crushed garlic 150-250 ml water (add as necessary while cooking) ½ cup (8g) fresh coriander leaves to your taste
