This is one of my fav easy soups and it holds many memories. During campus days my bestie and I went to Durban once and we visited our friend Riyaad Kamdar at a restaurant where he had ordered a prawn bisque, it was UH MAY ZING!! I will never forget it. This isn’t the same but it’s a close second! Enjoy 🤗
Ingredients:
1 (125g) onion, roughly chopped 2 tbsp (30ml) peri peri or chilli oil 60g garlic butter 1 tbsp preserved lemon pesto (sub 1 tsp (7g) salt and zest of 2 lemons (8g)) 1 tsp (2g) paprika (sub smoked paprika) ½ tsp (1.4g) chilli flakes 1 (25g) prawn / seafood stock cube ¼ tsp (1g) turmeric 1 tsp (2g) lemon pepper 1 tsp (2g) Cajun spice (optional) 2 cloves (6g) garlic, zested (optional) 2 (0.4g) lime leaves 300g prawn meat or whatever leftover shells etc you have 1-2 tbsp (14-28g) tomato paste 500ml water 1 large tin (400ml) coconut cream (sub fresh / thickened cream) ½ cup (8g) fresh coriander leaves to your taste 250ml fresh cream (optional) 6-8 large (450g) prawns for garnish - if you want to be extra
