Every meal needs that hint of sweet and chilli as the perfect accompaniment and this pineapple atchaar just hits the spot. It’s got that sweet, spicy tang that goes well with any dish but especially rice dishes.

Ingredients:

6 pineapples (6kg)
8 apples (1.5kg)
2 large cucumbers (600g)
3 tsp (21g) salt
3 tsp (6g) chilli powder
1 ½ cups (160g) methi masala (pickle masala)
3 tsp (6g) whole cumin
2 tsp (4g) whole coriander
1 cup (200g) sugar
½ cup (60g) maizena/cornflour
2 cups (500ml) vinegar
65ml oil
2 cloves (8g) garlic, zested
2 tsp (6g) mustard seeds
12-15 (6-8g) curry leaves
6 (150g) chillies, finely chopped
