Collection: Oil Cake/Sponge Cake
One of my fav Friday bakes is this soft sponge cake slathered in apricot jam and sprinkled with coconut. A family recipe probably owned by every granny out there.
Ingredients:
4 eggs
1 cup (200g) castor sugar
5 ml (1 tsp) vanilla extract
125ml (½ cup) oil
125ml (½ cup) water
315ml (1 and ¼ cup/ 144g) Cake Flour
15ml (3 tsp) baking powder
2-3 tbsp (45ml) apricot jam
3 tbsp (14g) coconut
